A Yummy & Healthy-ish Snack That Anyone Can Make!

Over the past couple of years, cottage cheese has gone from being a forlorn couple of SKUs on the grocery shelf to having a big and long-lasting moment! And I’ve jumped on the bandwagon 😀

Cottage cheese is delicious, high protein and versatile, even if you’re not on a keto diet. The recipe I’m sharing takes minutes to put together because there are just two key ingredients: cottage cheese and parmesan.

The herbs and spices in the recipe are extras that I think add to the flavor.

The finished crisps look like savory lace cookies, and they are absolutely addicting!

Cottage Cheese Parmesan Crisps

Ingredients

  • 1 cup of cottage cheese (full fat is best)
  • 1 cup of grated or shredded parmesan cheese 
  • 1/2 tsp granulated onion
  • 1/2 tsp granulated garlic
  • 1/4-1/2 tsp salt 
  • 1/4-1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
  • 1/2 tsp oregano

  1. Preheat the oven to 400°.
  2. Mix the ingredients together till they are well-mixed.
  3. Using a 1″ scoop or a tablespoon, scoop out scoopfuls of the mixture and place them 2″ or so apart on a cookie sheet prepared with parchment paper. Flatten the balls with the back of a spoon.
  4. Bake for about 15 minutes till the crisps look golden and crispy! Let them cool somewhat before eating because they are molten hot out of the oven.

Notes

I don’t use the expensive Parmigiano Reggiano to make this recipe. Domestic parmesan will do nicely. You can either grate the cheese yourself or buy it grated. If you are buying it already grated or shredded, check the ingredient list on the package to make sure it doesn’t contain cellulose, an ingredient to prevent clumping that’s not necessary.

Although I think the herbs and spices above add flavor to the recipe, choose herbs/spices that you like and use as much or as little as appeals to you.

Make sure you don’t place the mixture balls too close together. You can see here what happens if you do!! I cut mine tonight to separate the crisps that merged.

The crisps taste yummiest a few minutes after they come out of the oven. But if you don’t finish them in one sitting, place them in an airtight container and then warm them in the oven for a couple of minutes before eating. Enjoy!

  2. This is such a clever way to use cottage cheese — I never would have thought to bake it into crisps but it makes total sense given how well parmesan crisps work on their own. The “lace cookie” description is what really got me, that texture sounds absolutely perfect for snacking. Do you think these would work as a base for toppings like guacamole or a little smoked salmon? Feels like they’d be amazing as a party appetizer too!
